What’s getting me through the day

What’s getting me through the day today…

  1. An oatmeal raisin Luna Bar and coffee…  BTW…   LOVE this flavor Luna. At first I liked it… now it’s true love.
  2. More coffee.
  3. Overnight oats….. Strike that.  I made HOT oats today!  I haven’t had these in MONTHS.  Felt kinda like I was cheating on my OO’s with their warmer, yet slightly less satisfying brother… Ahem.. moving on.
  4. More coffee.
  5. Lunch from subway courtesy of my HLS swag bag 🙂 I love freebies!
  6. A Milano cookie.
  7. Coffeeeeeeeeeee

QUESTION:  What’s getting you through the day?  Almost there, folks!

A sandwich BUILT for Hummus

It’s Thursday, and I am one happy lady.  Thank you to those of you who commented on yesterday’s tell me something happy post.  Each one of your comments resulted in a big smile on my face, and I thank you again and again for sharing your happy thoughts with me!

Breakfast #1

Today I planned on eating the last of the scrambled eggs I cooked up on Sunday, but I was in the mood for something a little different.  Something with a little kick.  And when I’m in such a mood, I turn to my friend Frank.  Frank’s Red Hot that is 🙂

Come to think of it, I can’t leave out my good friends George and Mama Lupe either!  Frank, George, and Mama Lupe all contributed to my yummy breakfast wrap.

Leftover scrambled eggs + several shakes of Franks atop a Mama Lupe low carb tortilla:

Then I wrapped it up burrito-style and grilled on the George for about 5 minutes, until the eggs were hot and the tortilla was crispy.

DSCF2921

I also heated up the broccoli in the microwave… Unfortunately my microwave doesn’t have a human name…  Frank, George, Mama Lupe, and Emerson (I guess Emerson could be  a last name).

I swear the George Foreman grill is one of the most amazing kitchen gadgets on earth–or at least the most amazing one in my kitchen!

It’s getting cold in the mornings now…  I have a feeling pretty soon I’ll be saying farewell to cold oats and heading back to the warmth the traditional hot oats.  *Sigh*

Lunch

Ive blabbed my Trader Joe’s sob story on this blog many a time.. Sooooo far to drive (~1 hr away) to the nearest TJ’s… So sad.  Luckily, my mom picked me up some Trader Joe’s Hummus on her last trip to TJ’s!  WOOOOOOT!

The hummus was not an afterthought for today’s sandwich, not a mere condiment to go on the bun.  No.  Today’s sandwich was BUILT specifically for Trader Joe’s Cilantro Jalapeno Hummus.

This sandwich consisted of a Pepperidge Farm 7 grain deli flat & a four ounce grilled chicken breast:

That I topped off with sliced tomato, onion, and the STAR of the show:  Trader Joe’s Cilantro Jalapeno Hummus

Then I added some fresh spinach and some sprouts.  Excessive veggies?  Perhaps.

I also had some leftover roasted cauliflower on the side.  Cauliflower might looking boring, but trust me. It was fab.

No recipes, just deliciousness.

After work today, I went for a walk with  my sister through the park near her house.  I have to admit, walking and talking with someone is a whole heck of lot more fun than running by yourself.  Just sayin.

After the walk, I headed to the BF’s to make up some dinner.  That’s 2 times in one workweek!  GASP!  Anyway, I had no recipe in mind–I just wanted something TASTY and simple.  And I had a crap ton of veggies to use up in my fridge.  When all else fails, make fajitas.  That’s my life motto actually 😉

First up, I chopped up a green pepper, red onion, a small zucchini, and some white mushrooms and tossed them with a little extra virgin olive oil, garlic salt, cajun seasoning, and black pepper:

Next I made some pico-de-gallo out of some fresh cilantro, tomatoes, red onion, lime juice, garlic salt, and black pepper.  Pico-de-gallo.  PICOOOOO-de-GALLO…  Have you guys seen that Wendy’s commercial??  Makes me laugh every time.

I let the veggies cook for about 15 minutes on the George, then loaded up 1 Mama Lupe low carb tortilla and a big bed of lettuce with the veggies, PIIICCOOOO-de-GALLO 😉 ) , banana pepper rings, some shredded grilled chicken (which I cooked up Sunday night), some Tostitos salsa (leftover from last night’s Mexican Meatloaf), and some Stonyfield Farms Plain Fat-Free yogurt:

Fantastic.

Side note – Have you checked out the ingredients on Tostito’s salsa?  It’s all natural, and I didn’t even realize it!  Props to Frito Lay!

BTW – I’ve found that Stonyfield Farms Plain Fat-Free yogurt makes an EXCELLENT substitution for sour cream.  This makes me very happy indeed 🙂

Tell me something happy in your life.

I believe PMA’s are contagious.  What’s a PMA you ask?  It’s a positive mental attitude.   I think somewhere in middle school I learned about a PMA in health class or something, and it just really stuck with me.  The outcome of your day (and your life for that matter) is directly impacted by your outlook and attitude.  I am definitely guilty of sweating the small stuff in life, and it’s something that drives me CRAZY about myself.  Whenever I’m feeling down, I often ask my friends/coworkers to tell me something happy in their life at that moment, and they often do the same when one of them is experiencing a particularly rough day.  Focusing your attention on the GOOD makes dealing with the bad a whole heck of a lot easier.

Recently, my local radio station started doing a “Tell-me-something-good-Tuesday” where listeners call in and say what’s good in their life.  I LOVE this concept.  So often we all dwell on the bad, the unhappy, and what’s going wrong.  Well today isn’t Tuesday, but I’d still love to hear something happy in your life at this moment.

Breakfast #1

When I woke up this morning I was STARVING.  I think it was because I skipped my late night snack last night.  Usually, I wait to eat my first breakfast until I am at my desk at work, but today I couldn’t even finish getting ready without downing a small bowl of Honey Bunches of Oats with some Almond Breeze Unsweetened Vanilla Almond Milk (one of my favorite combos).  So instead of eating the eggs I had planned on having for breakfast, I decided to go with something a little smaller…

The grilled fruit & nut butter wrap makes a comeback!  I haven’t had one of these in forever.  I pulled a Mama Lupe Low carb tortilla out of the freezer, smeared a tablespoon of Smucker’s Organic Peanut Butter on top, and then added a couple sliced up strawberries:

 DSCF2987[1]

I rolled the wrap up burrito-style, and grilled on the Foreman for about 5 minutes.

DSCF2993[1]

Then I wrapped the little guy up in foil, and tossed him in my purse.  I had a meeting first thing this morning, but an hour after I grilled the wrap it was still nice and warm:

YUM!

Breakfast #2

Today I had a NEW (to me) Chobani flavor!!  Pomengranate chobani!!! Yum!  I topped the yogurt with some fresh blueberries and some granola I got at the Healthy Living Summit:

 DSCF2998[1]

The granola is from Mix My Granola – and this is a pretty cool concept.  You can log onto their website and make up your own granola concoctions with pretty much ANYTHING you want in it from chia seeds to organic gummy bears 🙂

I believe this bag had the organic cereal and raisins in it, and it was YUM.

Lunch

Today’s lunch was leftover’s from last night’s Mexican Meatloaf and Monday’s cucumber salad:

Now I need a siesta…

Soooooo… Leave a comment and tell me something happy in your life at this moment!

Taking Turkey Meatloaf South of the Border

Take a LOOKSIE what I made!

DSCF2962

I had full intentions of making my turkey meatloaf (aka Turkey Meat Muffins) for dinner tonight, but I decided to take the turkey meat muffins a little off the beaten path.  A little south of the border if you will 😉

My take on the south of the border meatloaf included:

  • 8 ounce 93% lean ground turkey breast
  • 1/4 cup quick oats
  • 1/2 cup chopped white onion
  • 1/4 cup salsa  (I used Tostitos Chunky Medium Salsa)
  • 2 tbsp chopped cilantro
  • 1 egg white
  • 1/4 tsp each ground cumin, red pepper flakes, salt, and black pepper
  • 1/8 tsp cayenne pepper

Everyone into the tub:

DSCF2939

Once mixed, I divided it up into four even meatballs and plopped into a muffin tin that I’d sprayed down with cooking spray.  Then I topped each of these little guys off with some sliced fresh jalapeno from my garden.

Ready to get their bake on:

DSCF2944

The meatballs cooked for 35 minutes in a 400 degree oven.

I also roasted up some cauliflower for my side dish.  Have you jumped on the roasted veggie bandwagon yet?!?  Roasted veggies are AWESOME tasting and also awesomely simple.  All I did tonight was toss some chopped cauliflower onto a sprayed down cookie sheet, sprinkle liberally with garlic salt and black pepper, and pop into the 400 degree oven for 20 minutes.

Altogether:

Now THAT’s a spicy meat-ta-ball-eh… sorry I had to do it.DSCF2956

I also put a tbsp each of the Tostito’s salsa and some Stonyfield Farms Plain Fat Free yogurt on my plate for dippin:

In action!
